Elona’s Mexican Bean Mix For Nachos Or Tacos

Background
It's just bloody delicious and if I didn't live with my family, I would be eating this every day.
Ingredients
- 1 brown/white onion
- 2 cloves of garlic
- 1 zucchini
- 2 carrots
- 1 red capsicum
- 1 yellow/green capsicum (the more colours the better)
- 1 can of 4 beans mix
- 1 can of black beans
- 1 can diced tomato
- 1 large jar of salsa
- Paprika
- Cumin
- Oregano
- Salt
- Pepper
- Chilli (to your taste)
Instructions
Chop all the veggies, onion & garlic (I like to chop them into small cubes)
Rinse your beans.
Throw the onions and garlic into the pan on medium heat with some oil and let them brown for a couple of minutes.
Once the onions are browned, throw in all your chopped veggies. Let them heat up in the pan until they are cooked through and become soft. This will take between 5-10 mins
Once the veggies are cooked, throw your beans into the pan and stir. Let them cook for another 5 minutes.
Add your can of diced tomato & jar of salsa and stir.
Season with all the spices to taste. I'm a big fan of paprika so I like to add lots of that in. Halve the amount of cumin & oregano compared to paprika and top it with salt and pepper to taste.
Let this simmer on the stove for another 5 minutes.
Serve with guacamole, sour cream, cheese & corn chips OR throw the mixture into some wraps/taco shells. Whatever you fancy.
