This is another recipe from my friend Amanda. It originally came from one of her many cookbooks and both of our families have perfected it over the years. We eat it often at home and have also made it for friends, it’s an allrounder . Warning: it calls for chicken thighs. We made it once with chicken breasts instead, and it wasn’t as good. No idea why, but I would recommend to use chicken thighs.
Preheat oven to 200 degrees Celsius and oil a baking tray.
Crush the peanuts until they become finely ground with a food processor or a stick blender.
Add hoisin sauce, vinegar and salt. Put in a large bowl, add the chicken pieces and rub the paste into the chicken.
Put chicken on tray and bake for 20 minutes until chicken is cooked and sauce is dark.
Sprinkle with loads of fresh herbs and serve with rice.
